Wynboer Tips for January
PLANNING
- Make preparations for the pressing season - ensure that pressing equipment is ready and make sure of the cellar grading system.
- Plan and schedule establishment actions for the current year's planting, inter alia soil preparation (also do the required research with regard to establishment and planning for establishment in 2008 so that plant material may be ordered in good time).
- Order cover crop seed, fertiliser, lime, etc for post-harvest applications.
VINEYARD PROGRAMME
Irrigation
- Irrigate according to vines' needs, but always bear wine goal and expected harvest date in mind when taking irrigation decisions.
- High water stress before the harvest is not desirable.
Canopy management
- Tip actively growing vines to boost the translocation stream to the bunches.
- Break out leaves judiciously if canopy above bunch zone is too dense.
- Remove green and poorly coloured bunches at 80% véraison for high quality wine goal.
Disease and pest control
- Persist with the necessary preventative programmes on late cultivars especially and where required, but stick to the withholding periods for chemical applications.
Vine development
- Remember to keep paying attention to the development of young vines.
Sampling and harvest
- Make an early start with monitoring of the ripening process and make sure that pressing takes place at the correct degree of ripeness in accordance with the wine goal.
- Stay in touch with the winemaker to plan the pressing date and arrangements.
